Summer Food

Here's a quick, easy summer dish that my whole family will eat! It does require few minutes over the stove, but no hot oven. We actually have this year round on days when I forget to plan for something else.

Cheese Tortellini with Peppers

Bag of Frozen Tortellini (or whatever pasta we happen to have on hand)
Olive Oil
Onions
Minced Garlic
Red or Yellow Bell Pepper
Parmesan or Romano Cheese

Start boiling water for the pasta. Heat about a quarter cup of olive oil in a skillet.

When you start cooking the pasta, throw chopped onion and a couple spoonfuls of minced garlic in the olive oil and saute until the onions begin to soften. Then add chopped peppers (and basil and oregano, if you like) and saute until peppers are cooked to your desired softness (we like ours to remain a bit crunchy).

Drain the pasta and toss with the pepper and onion mixture. Top with parmesan or romano cheese.

Sometimes, I substitute frozen peas for the peppers - just defrost them before adding to the skillet.
